A comforting one-pan casserole with tender meatballs, fluffy rice, and melted cheese, perfect for busy weeknights.
Ingredients
1 lb frozen fully-cooked meatballs
1 cup long-grain white rice
1 (10.5 oz) can condensed cream of mushroom soup
1 cup beef broth
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup diced onion
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp black pepper
1 tbsp olive oil
Instructions
Step 1: Preheat oven to 375°F (190°C).
Step 2: In a large skillet, heat olive oil over medium heat. Sauté onion and garlic for 3-4 minutes until softened.
Step 3: Stir in rice, cream of mushroom soup, beef broth, Italian seasoning, and black pepper until well combined.
Step 4: Transfer mixture to a 9×13 inch baking dish. Arrange frozen meatballs evenly over the top.
Step 5: Cover dish tightly with aluminum foil and bake for 25 minutes.
Step 6: Remove foil, sprinkle both cheeses over the casserole, and bake uncovered for 5-7 minutes until cheese is melted and bubbly.
Step 7: Let stand for 5 minutes before serving.
