Ingredients

1 lb ground beef (80/20)
1 medium onion, diced
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 tsp dried thyme
4 medium russet potatoes, peeled and thinly sliced
1 cup shredded cheddar cheese
1/2 cup beef broth
1/4 cup sour cream
2 tbsp olive oil
Fresh parsley for garnish (optional)


Instructions

Step 1: Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
Step 2: In a large skillet, heat olive oil over medium heat and cook ground beef until browned, about 8-10 minutes.
Step 3: Add diced onion and minced garlic to the skillet and cook for 5 minutes until softened.
Step 4: Season the beef mixture with salt, pepper, paprika, and thyme, then stir in beef broth and simmer for 2 minutes.
Step 5: Arrange half of the sliced potatoes in the baking dish, top with half of the beef mixture, and sprinkle with half of the cheese.
Step 6: Repeat layers with remaining potatoes, beef mixture, and cheese.
Step 7: Spread sour cream evenly over the top layer.
Step 8: Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until potatoes are tender and cheese is bubbly.
Step 9: Let cool for 5 minutes, garnish with parsley if desired, and serve hot.
