1 teaspoon dried thyme
1 head garlic, cloves separated and peeled
4 medium carrots, peeled and cut into 2-inch pieces
2 medium potatoes, cut into 1-inch cubes
1 large onion, cut into wedges
1 lemon, sliced
1/4 cup chopped fresh parsley


Instructions

Step 1: Preheat oven to 425°F (220°C).
Step 2: In a large bowl, toss chicken thighs with 1 tablespoon olive oil, salt, pepper, and thyme.
