Ingredients
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) black-eyed peas, rinsed and drained
1 can (11 oz) corn kernels, drained
1 red bell pepper, diced
1 green bell pepper, diced
1/2 red onion, finely chopped
2 Roma tomatoes, seeded and diced
1 jalapeño pepper, seeded and minced
1/4 cup fresh cilantro, chopped
1/3 cup olive oil
1/4 cup red wine vinegar
2 tablespoons fresh lime juice
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1: In a large bowl, combine black beans, black-eyed peas, corn, red bell pepper, green bell pepper, red onion, tomatoes, jalapeño, and cilantro.
Step 2: In a small bowl, whisk together olive oil, red wine vinegar, lime juice, cumin, chili powder, salt, and black pepper until well combined.
Step 3: Pour the dressing over the bean and vegetable mixture and toss gently to coat evenly.
Step 4: Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld, stirring occasionally.
Step 5: Serve chilled with tortilla chips, as a topping for grilled meats, or as a fresh salad.
