Ingredients
8 oz feta cheese
1/4 cup Greek yogurt
2 tbsp extra virgin olive oil
1 tbsp honey
1 lb fresh strawberries, hulled and halved
1 tbsp balsamic vinegar
1 tbsp olive oil
1 tsp fresh thyme leaves
Salt and black pepper to taste
Toasted baguette slices or crackers for serving
Instructions
Step 1: Preheat oven to 400°F (200°C).
Step 2: In a bowl, toss strawberries with balsamic vinegar, 1 tbsp olive oil, thyme, salt, and pepper.
Step 3: Spread strawberries on a baking sheet and roast for 20-25 minutes until softened and slightly caramelized.
Step 4: While strawberries roast, combine feta, Greek yogurt, 2 tbsp olive oil, and honey in a food processor.
Step 5: Process until smooth and creamy, about 2-3 minutes, scraping down sides as needed.
Step 6: Transfer whipped feta to a serving bowl and let cool slightly.
Step 7: Top whipped feta with roasted strawberries and their juices.
Step 8: Serve immediately with toasted baguette slices or crackers.
